Indian cuisine has shaped the history of international relations; the spice trade between India and Europe was the primary catalyst for Europe's Age of Discovery. Spices were bought from India and traded around Europe and Asia. Indian cuisine has influenced other cuisines worldwide, especially those from Europe but particularly Britain, the Middle East, Southern Africa, East Africa, Southeast Asia, North America, Mauritius, Fiji, Oceania, and the Caribbean.
India contributes to 75% of global spice production. This is reflected culturally through Indian cuisine. Historically, the spice trade developed throughout the Indian subcontinent, as well as in East Asia and the Middle East. Europe's demand for spices was among the economic and cultural factors that encouraged exploration in the early modern period.
Drawing from this long history, we will savour the many tastes and aromas so apparent in this style of cooking while learning new cooking techniques.
